Anna, meine Tochter einer anderen Mutter, ist halb Rumänin. Also habe ich sie gefragt, ob sie nicht ein Rezept für mich schreibt und fotografiert. So hat sie mir Anna’s Salata de Vinete gegeben. Sie hat ja bereits im Australien Event geholfen! Und sie hat mein Lieblings-Gemüse verarbeitet, für mich Auberginoholic, ein herrlicher Auberginen Salat, oder Dip oder Aufstrich! Ganz herzlichen Dank Anna, toll dass du wieder mitmachst bei mir. Diesen Monat reisen wir mit Volkermampf in der Kulinarischen Weltreise nach Rumänien, deshalb dieses feine Rezept!

Anna, my Daughter of another mother, is half Romanian. So, I asked her, if she could give me a recipe from her home country, of course with photos and all. She already helped in the Australian event! And she used a recipe with my favorite vegetable, the eggplants for me auberginoholic! A wonderful eggplant salad, or spread or dip! Thank you very much, Anna, I am happy to have you back on my blog! Anna’s Salata de Vinete

Salata de Vinete oder Auberginen Salat ist ein Aufstrich fürs Brot. Es ist ein perfekter Snack für einen heissen Sommer Tag und sogar für Leute, die Auberginen normalerweise nicht mögen.

Du brauchst:
3 Auberginen
1 kleine Zwiebel, fein gehackt
1 Knoblauchzehe, fein gehackt
115 g Mayonnaise
50 g Sonnenblumenöl
Salz und Pfeffer

Und zur Garnitur:
Tomaten
Gekochte Eier

Die Auberginen mit einer Gabel mehrfach rundherum einstechen.
Dann auf einem Backblech im Ofen bei 200 C Grad ca. 40-45 Minuten rösten, bis die Haut braun ist und schrumpelig. Sobald sie ausgekühlt sind, die Haut ablösen. Die Auberginen klein hacken. Ich habe den Saft behalten, der gibt guten Geschmack! Aber falls Ihr den abgiessen wollt, könnt Ihr das tun.
Nun alle Zutaten dazu geben und gut vermischen. Man kann mehr oder weniger Zwiebeln und Knoblauch dazu geben! Streiche das Salate de Vinete auf einer Brotscheibe, dekoriere mit etwas Tomate oder gekochtem Ei. Poftă Bună! (En guete auf Rumänisch)

Salata de Vinete or Eggplant salad is a spread to put on your slice of bread. It’s a perfect snack for a hot summer’s day and also for people who don’t like eggplant, or so I was told.

For this you’ll need:
3 Eggplants
1 small onion, chopped
1 Garlic cloves, chopped
1/2 cup of Mayonnaise
1/4 c Sunflower Oil
Salt and Pepper

And for the garnish:
Tomatoes
Hard boiled eggs

Stab your eggplants all over with a fork. Then place them in the oven at 200 degrees celcius for 40-45min or until the skin has browned and is folding inward.
Once they are cooled, peel the eggplants. Dice the eggplants into small pieces. I tend to keep the juices for the flavour, but you can also drain the diced eggplants if need be.
Add all of the ingredients together with the diced eggplant and mix well. Depending on your preference you can more or less onion or garlic.
Spread your Salate de Vinete on some bread and garnish it with some sliced tomatoes or boiled eggs. Poftă Bună! (Enjoy in Romanian)
