Und wieder wird gerettet bei #wirrettenwaszurettenist, diesmal in der Vorweihnachtszeit! Wie wär es da mit einem Vorweihnachtlicher Apfel-Amaretto Kuchen? Wir retten also nicht nur Esswaren, die man sehr wohl auch selber herstellen kann (man muss sie nicht fertig kaufen), sondern wir retten auch die Weihnachtszeit. Das heisst, wir bringen Euch Ideen, was man so alles um diese spezielle Zeit selber machen kann.

Ich finde, die Vorweihnachtszeit hat seinen eigenen Duft! Es riecht nach Orangen, Äpfel, Zimt, Kardamom, Lebkuchen und vieles mehr! Bei mir bringt das immer Erinnerungen aus meiner Kindheit auf, man kam von der Schule heim und es duftete so gut, weil Mama Plätzchen gebacken hatte! Wie toll war das!

Ich habe immer noch Boskop Äpfel von meiner Schwägerin, die lassen sich super auf dem Balkon lagern. Diesmal wollte ich den Geschmack etwas Richtung Weihnachtszeit bringen und habe Amaretti und Amaretto dazu getan. Der Kuchen wurde sehr lecker mit einem feinen Amaretto Geschmack. Dieser Kuchen wird ein Highlight sein auf jeder Weihnachts- oder Adventstafel.

Again, our group #wirrettenwaszurettenist is out saving the Advent! We are not only saving food which we can bake or cook (exactly, no need to buy ready-made food!) we also save the Advent! We bring you many ideas what to bake and cook in this special time.

I think, Advent has its own smell! It smells of oranges, apples, cinnamon, cardamom, gingerbread and many more things. I always get flash backs to my childhood when I smell these things. When I came home from school the house smelled so good from the baked cookies my mother made. Such wonderful memories!

I still have some apples from my sister-in-law, they can be easily stored on the balcony. This time I wanted to bring some Christmas taste to a cake and so I added Amaretti and Amaretto. The cake was very delicious with a slight taste of almond. This cake will be a highlight for any Christmas table.

Vorweihnachtlicher Apfel-Amaretto Kuchen

Für eine Springform von 26 cm:
300 g Mehl
1 Ei
110 g Zucker
1 Orange, den Abrieb
1 TL Vanillezucker
180 g Butter in Stücken

Füllung:
5 Boskop Äpfel
1 Zitrone, den Saft
Etwa 100 g Amarettini
20 ml Amaretto Likör

Das Mehl mit dem Zucker, Vanillezucker, Orangenabrieb und den Butter Würfeln schnell verkneten und dann 30 Minuten im Kühlschrank durchkühlen lassen.
Für die Füllung die Äpfel schälen und würfeln, diese im Zitronensaft einlegen. 1/3 des Teiges im Kühlschrank lassen, die anderen 2/3 dünn auswallen. Ein Backpapier zusammen krümeln und unters Wasser geben, dann abschütteln und in die Backform geben. So lässt sich das störrische Papier gut in Form geben. Den Teig in die Form geben und die Seiten hochziehen. Die Amaretti Plätzchen grob zerkrümeln und auf den Boden geben. Die Äpfel darauf geben und flach machen. Den Amaretto Liqueur darüber giessen. Den 1/3 Teig dünn auswallen und darauf legen. (ich habe das zwischen Klarsichtfolien gemacht.) Die Ränder leicht festdrücken. Im Ofen bei 200 C Grad ca. 40 Minuten backen. Auskühlen lassen und mit Puderzucker bestreuen.

For a Cake of 26 cm diameter:
300 g Flour
1 Egg
110 g Sugar
1 Orange, Zest
1 tsp Vanilla Sugar
180 g Butter in Pieces

Filling:
5 Apples
1 Lemon, the Juice
Approx. 100 g Amarettini
20 ml Amaretto Liqueur

Mix the flour with the sugar, vanilla sugar, orange zest and the butter pieces, knead it quickly together to a soft dough. Put into the fridge for 30 minutes.
For the filling peel the apples and dice them, put them into the lemon juice. Leave 1/3 of the dough back into the fridge but roll the 2/3 of the dough out thinly. Crumble together a baking paper and put it under the water, shake water off and put it into the baking dish. This way it will fit perfectly. Put the dough into the baking dish and pull the sides up. Crumble the Amaretti cookies and put them onto the bottom. Add the apples and flatten them, then pour the Amaretto Liqueur over the apples. Roll the 1/3 of the dough out thinly (I did that in between cling-foil) and put it onto the cake. Push the sides together. Bake in the oven at 200 C for approx. 40 minutes. Let cool and sprinkle with icing sugar.
