Zucchini-Tomaten Risotto

So langsam macht mein Magen wieder mit und das bedeutet, ein Risotto muss her!
Wenn es mir nicht so gut geht, dann esse ich am Liebsten Risotto! Das scheint meinen Magen zu beruhigen. Habt Ihr auch solche Macken?
 
Ich habe meinen Risotto mit Zucchini und Tomaten angereichert. So schmeckt der Risotto wirklich gut!  Und aus den Resten werde ich Arrancini machen. Die reiche ich dann als Fingerfood. So mache ich 2 verschiedene Mahlzeiten aus einmal Kochen! Das ist perfekte Restenverwertung!

Fuer 4 Personen:
350 g Risottoreis
1.5 L Gemuesebruehe
Salz und Pfeffer
Paprika
Oregano
Chilipulver
20 g Butter
2 EL Olivenoel
100 ml Weisswein
2 Knoblauchzehen, gehackt
1 rote Zwiebel, gehackt
1 Zucchini, in kleine Wuerfel geschnitten
1 grosse Tomate, in kleine Wuerfel geschnitten
30 g geriebener Parmesan
20 ml Sahne (optional)
 
Die Bruehe aufkochen und zur Seite geben.
In einem schweren Topf die Butter und das Olivenoel erhitzen, dann den Knoblauch und die Zwiebel darin weich kochen.
Danach den Reis (ungewaschen!) dazu geben und unter ruehren mitbraten bis er glasig ist.
Mit dem Weisswein abloeschen. Gut umruehren und wenden, damit der Reis nicht anbrennt.
Sobald der Wein eingekocht ist, 2 Suppenschoepfloeffel voller Bruehe zugeben. Gut umruehren, je mehr man das tut, desto cremiger wird der Risotto.
Alles sehr gut wuerzen, Reis ist ziemlich fade, man darf also grosszuegig wuerzen.
Die Zucchini und Tomaten zugeben und nun unter ruehren immer wieder die Bruehe einkochen lassen, dann neue Bruehe zugeben, ruehren und so weiter, bis der Reis schoen weich und cremig ist.
Den Reibkaese zugeben und wer mag, die Sahne. Gut vermischen und heiss servieren!

Zucchini-Tomato Risotto


Slowly my stomach gets back to normal, which means, I need to cook Risotto!
Whenever I don’t feel too good, I like to eat Risotto. It is good to my stomach. Do you also have special foods you need after being sick?
 
I added zucchini and tomatoes to my Risotto. This way it tastes just divine! And with the leftover Risotto I will make Arrancini. I will serve them as finger-food. This way I get 2 different meals out of one cooked dish. That’s how you work with leftovers!
 
For 4 Persons:
350 g Risotto Rice
1.5 L Vegetable Broth
Salt and Pepper
Paprika
Oregano
Chili Powder
20 g Butter
2 tbsp Olive Oil
100 ml White Wine
2 cloves of Garlic, chopped
1 red Onion, chopped
1 Zucchini, diced
1 big Tomato, diced
30 g grated Parmesan
20 ml Cooking Cream (optional)
 
Bring the broth to a boil, and then set aside.
In a heavy pot melt the butter and olive oil, add the onion and garlic and fry until soft.
Add the (unwashed!) rice and let it fry while tossing and turning all the time. When the rice is translucent add the white wine. Keep on turning!
As soon as the white wine has reduced, add 2 soup serving spoons of broth. Mix well; the more you mix the creamier the Risotto will be.
Season well, Risotto is quite bland, so be generous with your seasoning!
Add the zucchini and tomato and mix well. Now always let the broths reduce, and then add more broth. Keep mixing as often as possible! Cook this way until the rice is soft and creamy! (Risotto should not have bite, it should be really soft!)
Now add the grated cheese and if you like the cooking cream, mix well and serve!
