Zitronen Baiser Kuchen

Wenn's darum geht, Kuchen zu backen, dann bittet meine Mutter mich oft um Hilfe. Diesmal bat sie um einen Baiser Kuchen. Ich habe im Netz gesucht und einen passenden gefunden. Hier auf dieser Webseite, da sind sehr viele gute und leichte Rezepte und dabei war auch eines fuer einen Limetten Baiser Kuchen. Ich habe das Rezept etwas angepasst und da kam dies heraus.

Der Kuchen ist sehr gut und leicht und der Knusperboden passt wunderbar! Uns hat er sehr geschmeckt und ich habe viele Komplimente erhalten!

Fuer eine Pieform von ca 32 cm Durchmesser:
200 g Vollkornkekse
150 g Butter
5 Eier, getrennt
400 ml suesse Kondensmilch
4 Zitronen
1 Prise Salz
100 g brauner Zucker
1/4 TL Weinsteinbackpulver

Die Kekse in einen Gefrierbeutel geben und zerkruemeln, dazu kann man die Pfanne nehmen oder das Nudelholz. 
Die Butter schmelzen und dann mit den Keksbroeseln vermischen. Diese Masse in eine gefettete Pieform pressen, an den Seiten leicht hochziehen. 
15 Minuten im Kuehlschrank durchkuehlen lassen.

Unterdessen die Eigelbe mit der suessen Kondensmilch mit dem Mixer dick schaumig ruehren. 
Von 2 Zitronen die Schale abreiben. Alle Zitronen auspressen, das ergibt ca 130 ml Saft. Saft und Schale zur Eigelbcreme geben und gut vermischen.
Die Creme auf den Keksboden giessenund im Ofen auf der untersten Schiene bei 180 C Grad (Ober- und Unterhitze!) ca 30 Minuten backen.

Unterdessen die Eiweisse mit der Prise Salz steif schlagen und dann den Zucker einrieseln lassen. Nochmals ca 4 Minuten weiter schlagen, bis die Masse glaenzt, dann das Backpulver dazu geben.  

Den Eischnee in einen Spritzbeutel mit Sterntuelle geben und dekorativ auf den leicht ausgekuehlten Kuchen spritzen. Im Backofen bei 250 C Grad (Ober- und Unterhitze!) auf der untersten Schiene ca 3-5 Minuten braeunen.
Abkuehlen lassen und frisch servieren.

Lemon Baiser Cake


If ever there is a situation to bake a cake then you know I'm on it. My mom always automatically knows that if we need one, I will be the one to make it. This time I made a baiser cake. I Googled it and found one that sounded perfect, baiser and lemon. This website has a lot of recipes that are light, healthy, and delicious, including this key lime pie recipe. I had to adapt the recipe though because i forgot to buy certain vital ingredients... eh I mean, wanted to make it different...  

The cake was fantastic, light with a crunchy base. It matched together well and was not overly sweet or sour. Everyone seemed to like it.

For a Pie dish of 32 cm diameter:
200 g Wholewheat Cookies
150 g Butter
5 Egg-yolks

5 Egg-whites
400 ml sweetened Condense Milk
4 Lemons
1 Pinch of Salt
100 g brown Sugar
1/4 TL Bicarbonate of Soda

I put the cookies into a zip-lock bag and smashed them to bits. I used a meat cleaver, possibly my favorite kitchen tool.

Then melt the butter and add it to the cookies, mix and then press into the pie pan that is covered in some butter so it won't stick. The cookie base should be thick on the bottom and be slightly raised on the sides to create a little wall. Then put it in the fridge for about 15 minutes. 


In the meantime, mix the egg yolk and condensed milk until it is a little foamy.
Scrub the skin off of 3 lemons and press out the juice of four lemons, roughly 130 ml of juice. The juice and the skin should then be mixed into the egg yolk mixture.
Pour the cream onto the cookie base and put it into the oven on the lowest shelf at 180 C for 30 minutes. If possible, use the heat setting top and bottom heat. 

Then use the egg whites of all five eggs, add the salt and beat them stiff. Slowly add the sugar and go on beating until shiny. Add the Bicarbonate of soda and mix in. 
Pour this Egg-white mixture into a piping bag with a star-shaped tulle and pipe this onto the cake.

Bake at 250 C on the bottom of the oven (again with the same setting as before) foe 3-5 minutes.
Let cool down and serve!
